You know what’s funny? It didn’t dawn on me until yesterday that I hadn’t planned a special meal for V-day this week. Oops! Since V-day happens on a weeknight this year, I found some great recipes that won’t take a lot of time in the kitchen. Both the salad and the desserts can be made ahead of time and the main dish will only take 35 minutes to prep and bake. Yay for more time spent with the people you love.

I am so thankful the SCD allows for wine (or in this case champagne). We may have many other food limitations when celebrating, but it’s nice to be able to pick up a glass and make a toast, isn’t it? Toast your honey, your kids and your blessed life with this pretty, fruity drink.

When we were first married, my husband surprised me by making a Chicken Parmesan dinner for Valentine’s Day. It is one of the few times he has actually surprised me! To this day it’s one of my favorite Valentine’s Day memories. So imagine my pleasure when I found a Chicken Parmesan that was SCD friendly! This Chicken is coated with almond flour, but I’m going to attempt to use coconut flour instead since I can’t tolerate almonds – I’ll let you know how it goes!
If you don’t have a spiralizer, that’s okay, neither do I . I’m going to roast sliced zucchini (with a little salt & pepper) in the oven at 425 for 9 min. each side. LOVE roasted veggies.

This salad is so simple you don’t even need a recipe! Simply take strawberries, spinach, walnuts and poppy seeds and combine! To make your V-day meal prep go a little quicker, make the dressing and chop the strawberries the night before. Put in sealed containers and throw it in the fridge. On the day of, simply toss all the ingredients together. Easy peasy.

To Make SCD Friendly: The cookie has SCD legal ingredients, but the frosting does not. See THIS SCD friendly recipe for frosting. To make ‘pink’ frosting, add puréed strawberries.
Though the title says ‘sugar’ the only sugar in this recipe is honey and the sweetness that comes from orange zest. No worries!
