Happy New Year! I am back from my time off and am excited to bring you more SCD (Specific Carbohydrate Diet) Meal plans. The last meal plan I offered was back in June, can you believe it? It doesn’t seem that long ago! You can find those meal plans here: 1, 2, 3, 4, 5, 6.
I have to admit, I’ve been a little lazy in the kitchen the last 6 months what with our move, changing jobs and acclimating to working at home–my stomach was on a roller coaster of stress and more stress. Things have settled down (for now) and it’s time to spice things up in the kitchen. I’m excited to try some new recipes Are you ready too?
A healthy body begins with FOOD. Here are 7 recipes that take a simple dinner and elevate it with special sauces, spices and marinades. Your NEW YEAR begins with GREAT FOOD!
Brisket Chili by Every Last Bite
I can’t wait to try this chili. I did a roundup of soups and chilis for SCD HERE, but this gem was not a part of that roundup. I don’t even know where to begin to describe this yummy recipe! It’s made with brisket instead of ground meat, which for me just takes it to a whole new level. Add in the butternut squash, peppers, tomatoes and seasonings and you are going to say YUM!
To Make SCD Friendly: No changes-you are good to go. Woo-hoo!
The World’s Best Chicken by Rachel Schultz
I eat a lot of chicken, don’t you? In fact, my kids have started to call every meat I put on their plate ‘chicken’. Lol! That being said, I’m always looking for a recipe that is going to take my boring broiled chicken to the next level. Here it is friends and all it takes is a little Dijon mustard. If you aren’t a huge mustard fan, don’t discount this recipe-give it try to surprise yourself.
To Make SCD Friendly: Replace the syrup with honey. I would recommend buying your mustard HERE.
Pomegranate, Pear, Pecan Salad by Five Heart Home
This salad is a gorgeous take on a standard. With fresh pears, pretty pomegranate and crunchy pecans you have enough p’s to make this Pop!
Raw Zucchini ‘Sushi’ Rolls by Ask Me Food
If you are looking for a recipe that can get your kids in the kitchen with you–look no further. Note: Remember to soak the cashews overnight in water. Cashews and avocado are the glue that holds these together. Wouldn’t these be fun to put in your lunch too?
To Make SCD Friendly: Skip the rice vinegar.
Butternut Squash Sausage by Real Food with Dana
I love including breakfast in my meal plan for the week. I eat sausage every morning for breakfast and this is definitely a step up from my simple ground turkey and spices. This recipe calls for butternut squash, bacon, apples and spices. I also love that you mix everything together and throw it in a pan. It’s calling my name, is it calling yours?
To Make SCD Friendly: No changes. Woo-hoo!
Double Bacon BBQ Burger by Livin’ The Crunchy Life
Now THIS is taking a plain burger and making it special! Cheddar cheese, BBQ Avocado Sauce and Bacon. It doesn’t get better than this, friends. This is definitely not an every-day type of food, but for a special meal – go for it. If dairy doesn’t agree with you, skip it altogether. You still can have the yummy sauce.
Honey Mustard Baked Salmon by RasaMalaysia
The cook time for this is 12 minutes. HOWEVER, you have to remember to marinate. That’s what always gets me! It only needs to marinate for 30 min. so give yourself a little sticky or alarm on your phone to marinate ahead of time. What’s in the marinade you ask? Garlic, honey, Dijon mustard – delicious, right?
To Make SCD Friendly: Skip the Japanese cooking sake and make sure you are using SCD legal mustard.
Okay – so a there are a FEW recipes here that have mustard. I wasn’t always a fan, but I haven’t had mustard in over a year so I maybe I went a bit overboard. Nonetheless, aren’t these recipes amazing! Just a few tweaks here and there to make them SCD friendly.
