We are winding down the Meal Plan series. Next week will be our last week and then I will be posting some yummy SCD legal desserts! It’s a little more challenging to find desserts that are SCD legal and I want to hook you up and help you out! Until then, enjoy this week’s delicious menu!
All I can say is this is going to be AMAZING for leftovers for lunches this week! This has to MARINATE for 6 hours so plan ahead. A 6 lb. roast cooks for 4 hours for slices or 6 hours for pulled pork. *Make sure you use SCD legal orange juice (Tropicana Pure premium Orange Juice in refrigerated cardboard container, bottles or jugs or refrigerated six pack “minis.”) Do not use concentrate as it is illegal.
After the careful preparations you made for the pork yesterday, this will feel like a breeze. A little bit of chopping and you are on your way to an easy weeknight meal!
This weeks Taco Tuesday is so light and fresh it’s perfect for a hot summer night! Make sure you use SCD legal dijon mustard like this one here. Leave out the Pineapple Balsamic to be SCD legal.
This recipe is so easy, my 10 year old made dinner! There is nothing fancy here, but paired with a side of roasted broccoli and a bowl of peaches, it’s a great weeknight meal.

For the last few weeks I’ve had breakfast on the meal plan for Thursday night. This week I wanted something a little different. If coconut milk is a no-go for you, substitute it with almond milk. It will be a different flavor for sure, but still very yummy! Instead of onion powder which has caking agents that contain starch, use finely diced REAL onion. Yum!
Hello Friday! This recipe requires some marinating overnight so add that to your to-do list while prepping dinner on Thursday. Friday summer nights are great for grilling and this recipe will not disappoint!
Isn’t this a beautiful salad? To make this salad SCD legal, leave out the jicama and substitute the rice vinegar in the dressing with red or white wine vinegar. Note the recipe serves 2, double if needed.
