When I was a kid every Sunday night was pizza night. We watched a movie together and shared in our love of pizza. I was
devastated a little upset when I thought I couldn’t have pizza anymore. Then along came this recipe and I LOVE it! Note: to keep SCD legal use Cheddar or another aged cheese or go without cheese (then it tastes a little less like pizza).
My mouth started watering the moment I saw this picture. It is soo simple to make. Prep time: 5 min. Cook time: 15 min. It doesn’t get better than that, friends!
So Taco Tuesday took a little spin and went all fancy with some shrimp and some amazing Mango Pineapple Salsa. If you have little ones you may want to go easy on the Cayenne.
Midweek is the perfect time to have a slow cooker meal. No prep for this one, just dump it all in your slow cooker and feel the joy of coming home to a meal all ready to go.
For some reason, I like having breakfast for dinner on Thursdays. Maybe because it’s toward the end of the week? At first I wasn’t too thrilled with frittatas. If you ask me, a frittata is just a fancy quiche and I grew up eating A LOT of quiche so it took me awhile to warm up to it. You can’t go wrong with this one! Roast the butternut squash beforehand if you are short on time on Thursdays. If you don’t have time to make the homemade sausage, you can also buy SCD legal sausage. This one here or here are both SCD legal.
Okay, yes I have two recipes with butternut squash this week. Sometimes when you are already making it for one recipe you might as well do it for another. So roast an extra squash on Thursday and then this meal will be a breeze!
We are having Koftas for dinner. What? Koftas. Yeah, I didn’t know what they were either, but you’ve probably eaten one before. It’s a meatball! 🙂 A Middle Eastern or Indian one, but Kofta sounds way more fancy shmancy, doesn’t it? PLUS these are on a stick and here in Minnesota if it’s on a stick it is GOLDEN! Okay, on with the recipe! The recipe calls for ground chicken, but you could use any ground meat. If you don’t have any skewers, don’t sweat it you could also make them into patties/meatballs and fry them in the pan that way too. Enjoy!
Hmmm. My mouth is watering thinking of all these DELISH recipes. So many people feel sorry for me on this diet and I will admit I’ve had my moments of feeling sorry for myself. Now that I’m finding all these recipe treasures for the SCD weekly meal plans, I realize how blessed I am to be able to eat REAL food that not only nourishes my body, but heals it as well.
