When I first learned of zucchini boats, I thought it would be a ton of work to carve out the middle, but it’s actually really easy and quite quick. You can use a regular spoon or even one of those pumpkin carver scrapey things – you know what I’m talking about? Anyway, they are so delicious and WAY better than a flour tortilla. I also find they are more filling than a tortilla. To make this recipe SCD-friendly, use this very simple Homemade Enchilada Sauce
- 2 C. tomato juice
- 1 tsp. chili powder
- 2 Tbsp. dried onions
- 1/4 tsp. garlic powder
- Salt & Pepper
- Place ingredients in pan, simmer 5 minutes.
Okay so I like to splurge on one Salmon meal a month. I used to HATE salmon, but I’ve learned it’s all in the preparation. Simple is better and be very careful not to overcook it. This a beautifully simple recipe and doesn’t it look so divine? If you don’t have fresh thyme, use 1/2 tsp. of dried thyme.
It’s Taco Tuesday! You don’t need re-fried beans or taco shells to make it a taco. Take some chicken and just add some cumin and a homemade picante sauce and it tastes just like one! I might also add black olives because a taco just doesn’t seem like a taco without black olives. Is that weird?
Midweek is always a great time to throw in a slow cooker recipe. Don’t skip the searing of the pork before hand, it makes the pork so much more flavorful. Mashed cauliflower is a great substitution for rice. If you don’t have a food processor, you could also try a high powered blender.
I love breakfast for dinner and my kids always think it’s a special treat. This would also work beautifully for a Sunday brunch. Make sure you use SCD legal sausage.
Hello Friday! Make this sauce while you are waiting for your quiche to cook on Thursday night and then all you have to do is roast the squash when you get home from work on Friday. I can’t begin to describe how delicious this is. I had this last Friday and other than a slight texture difference, it totally tasted like spaghetti to me. My spaghetti-loving daughter said it was the best spaghetti she has ever had. That is a HUGE compliment and a reason not to buy noodles ever again! My only criticism is that I couldn’t get the sauce to thicken up as much as I’d like. Don’t get me wrong, it tasted AMAZING, but it was a bit runny as you can see in my picture.

Isn’t this picture beautiful? The recipe is for a cast iron grill which I will tell you is going to make it taste AMAZING, but if I didn’t have one I would totally make this on the grill outside. I saved this recipe for Saturday because there is a bit more leg-work involved. The marinade takes this to the next level so don’t skip it! 🙂
