I can’t believe we are already on week 3! Next week is the last week of yummy desserts and then I am highlighting some delicious veggies. On the Specific Carbohydrate Diet veggies are a HUGE part of the diet. I want to help you come up with some favorite ways to make those veggies so you will enjoy eating them and maybe even make extra for leftovers or for your family too.
On to desserts! It’s nearly August and it has been blazing hot here. So much so that every time we go outside the kids sigh really loudly and say “It’s a great day for ice cream.” Their ‘subtle’ suggestion does not go on deaf ears, but I have to admit I cringe when I look at all the not real ingredients in store bought ice cream. I’d much rather make my own and you’d be surprised how a few ingredients can turn into something frozen that will satisfy that craving on a hot day. This week I’ve got ice cream, easy popsicles and a chance to use up those blueberries while they are still in season. Enjoy this week of desserts!
PALEO STRAWBERRY RHUBARB SWIRL ICE CREAM by My Natural Family
My youngest daughter LOVES strawberries, or any fruit for that matter. This frozen delight has strawberries, bananas and rhubarb. With a little honey and some coconut milk (look for labels that contain only coconut and water) it’s just enough sweet without crowding out the natural sweetness of the fruit. Note: Recipe calls to freeze strawberries and banana slices overnight-so plan ahead. No ice cream maker needed, just a blender!
CARAMELIZED BANANA PECAN ICE CREAM by My Natural Family
I have been obsessed with pecans lately. They are such an easy snack food when we are traveling or out and about. This ice cream has FOUR ingredients! Bananas, butter, Coconut milk, and pecans. Caramelizing the bananas in butter is what takes this recipe to the next level. Note: you will freeze the bananas and the caramelized bananas overnight -so plan ahead. All you need is a blender.
EASY FRUIT POPSICLES by SCDiet 4 Kids
This is a great recipe your kids can partake in. If they are a bit older, they can help wash and cut the fruit. The best part? They can choose what fruit to have in their popsicle! It’s sure to be a hit.
BLUEBERRY PUMPKIN MUFFIN BREAKFAST BARS by Paleo OMG
I know the title says breakfast, but there is so much sweet in these you could easily have them for dessert (okay, and for breakfast too). To make SCD legal, leave out the sesame seeds, swap out the maple syrup for honey and make your own baking powder (super easy see recipe here).
GRAIN FREE BLUEBERRY CRISP by Detoxinista
Last, but certainly not least is this very simple dessert. Sometimes you just need a dessert you can throw in the oven to be done when you’ve finished dinner. Nothing crazy here, just the yumminess of blueberries with a grain-free topping. Enjoy!
