I’ve been absent for awhile here. Thanks for waiting for my return. I’ve been juggling a lot lately with my day job, the kids schedule and quite a lot of single parenting as my husband works on his degree program. It makes for a long, exhausting day, but I miss you all and I’ve been itching to get back at it despite my weariness. So here we go!
If you are anything like me, you hear the word ‘squash’ and your face kinda crinkles up with that “ew-I-totally-don’t-like-squash” look. I know! I HATED squash as a kid. It’s stringy, the texture is mealy sometimes and the flavor was never sweet enough for my sweet tooth. Fast-forward to adult and starting the SCD (Specific Carbohydrate Diet) and I figured I should try to eat things I haven’t liked in the past. You know, be a grown-up about it and all. To my surprise, I fell in love with Butternut Squash. This first one is my favorite. If you have been a I-don’t-eat-squash-kind-of-person, maybe you should try one of these recipes. You just might surprise yourself! 🙂
1. Roasted Butternut Squash with smoked paprika and turmeric by Healthy Seasonal Recipes
Roasted, cubed squash is my absolute favorite. You can throw it in a stew, in ground-up hamburger, in eggs or on the side of your plate, or in a bowl for that matter. It’s super easy to make and that squashy-stringy-yucky texture thing you didn’t like as a kid is nonexistent in this recipe. You can bake with paprika and turmeric, or use any spice you like. Me? I just like salt & pepper baby. Super simple – always tastes great.
2. Crockpot Butternut Squash by Cook Eat Paleo
Okay friends, If you are intimidated by this large vegetable, this may be your answer. Throw it in a crock pot and call it good. Yes, you will still have to de-seed it to eat it, but hey! Side dish is done when you get home and let me tell ya, it’s always the side dish that’s hard to figure out, right? I can never come up with sides easily! Side dish? DONE!
3. Apple & Bacon Butternut Squash Hash by The Urban Poser
Okay, since the last one was super-duper easy we are going to go all fancy pants now. Anytime you add bacon and apples to anything you can pretty much count me in. This recipe has so much depth and sweetness and savory and I think I may have to make this for dinner tomorrow night. There are 4 ingredients, 5 if you add the pecans at the end.
4. Butternut Squash Pasta by B. Britnell
And we’re back to simplicity. This recipe is made way more simple with a spiralizer. A little butter, salt & pepper and you’ve got an easy base for any recipe.
5. Beef and Butternut Squash Stew by Noshtastic
Fall is nearly upon us and with that comes soup season. Yay! Here is a great recipe for the stove, but it also has a slow cooker version. Boo-yah.
6. Butternut Squash Souffle by Cook It Up Paleo
If you are not a huge fan of the texture of squash, then this may be the recipe for you. When squash is pureed it becomes very creamy and smooth and delish. This recipe has you cook the squash in the microwave so this won’t take long at all. If you are SCD, use a legal flour to coat the pan.
7. Butternut Squash Pasta Sauce by Le Creme de la Crumb
One more creamy recipe for you. This would go well with any legal ‘pasta’. Get out that spiralizer because you are going to want this creamy goodness coming your way. To make this SCD legal, be sure to use legal milk and cheese.
8. Roasted Butternut Squash Soup by Ahead of Thyme
This yummy recipe is pretty easy to make (a little bit of chopping). It makes a lot, but it’s freezer friendly. Hello next week’s dinner! So go roast some veggies, puree it in your food processor and sit down to a warm bowl of creamy soup.
