The Squash family of veggies are some of the easiest vegetables for the body to digest. Last week I shared recipes for Butternut Squash, today it’s Zucchini time. As you begin the SCD diet, you will want to peel and de-seed the zucchini as those parts of the veggie are hardest to digest. It takes a bit more time, but once you get the hang of it, it goes quite quickly. Today we’ve got baked goods, side dishes and main meals all with Zucchini. Enjoy!
1. Zucchini Tomato Bake by Delish.com
Isn’t this a beautiful dish? It’s so easy to make. Cut up veggies, toss in dish, add cheese, bake. What a great meatless dinner or easy side.
2. Almond Flour Zucchini Bread by Against All Grain
I had a favorite Zucchini recipe that had sooo much sugar. One peek at this picture reminded me of that yummy bread. I am definitely going to have to try this so I can get my zucchini bread fix. Personally, I’m not a huge fan of nutmeg so I will probably add more cinnamon but to each their own. Isn’t nice to know you can still eat some of your favorite foods while eating SCD or another special diet?
3. BLAT Salad with Zucchini Noodles by Inspiralized
You are probably wondering, like I was, what a BLAT salad is. It’s a BLT salad only better because it has avocado. Hello lovely avocado! (my fav in case you haven’t been following along recently) This recipe may not be as simple as throwing everything together, but this beauty is bound to please the taste buds and use up some of those veggies from your garden. Pair it with a steak and some wine and you have yourself a great meal for guests.
4. Zucchini Apple Muffins by This Is So Good
This grain-free recipe uses both blanched almond and coconut flour. With the zucchini adding moisture and the apple adding the sweet, this recipe is bound to please your pickiest eater.
5. Zucchini Pasta with Avocado Sauce by Simple Vegan Blog
This simple dish combines pine nuts, avocado, lemon juice and basil to create a delicious sauce that boosts the flavor of your zoodles. This is a must try – especially if you are an avocado lover like me. Note that Elaine (founder of SCD) recommends waiting to eat Pine Nuts until you have been on the diet for at least 6 months or more. If you can’t do pine nuts, I think cashews would be a nice alternative.
6. Paleo Taco Zucchini Boats by $5 Dinners
I love zucchini boats as a replacement for the traditional taco shell. It’s more filling and boosts your veggie intake quite easily. Try it for your next Taco Tuesday and you won’t be disappointed.
7. Lemon Parsley Grilled Zucchini by Against All Grain
As we head into Fall and the days of grilling become numbered, this recipe is perfect to add to your chicken on the grill. It’s marinated in lemon and parsley -the perfect side for an end-of-summer grill.
