If you’ve been following along- for the last few weeks we have featured recipes for vegetables that are legal in the Specific Carbohydrate Diet (SCD). While these recipes are intended for those following SCD, they are also great for anyone who is interested in finding ways to up their vegetable intake. So far we’ve touched on CARROTS, BUTTERNUT SQUASH, and ZUCCHINI. Today we have some fabulous recipes for Cauliflower.
When I think of the least-liked vegetable on a standard veggie tray, I think of cauliflower. I’ve never liked it. I’ve been on the SCD for one year and have purposefully avoided it. To me, it was on the same plane as brussel sprouts. Hated ’em as child, hate ’em as an adult. You know where this is going. I’m desperately trying to add more foods into my diet for variety and I decided to take the plunge and give cauliflower a go. At worst, I would try it and hate it all over again at best I would have another veggie to eat. Imagine my surprise when I roasted some cauliflower using the recipe below called Parmesan-Roasted Cauliflower and discovered cauliflower is really tasty! Is it the adult taste buds? Is it keeping an open mind or finding the right recipe? I don’t know, but if you have been avoiding cauliflower because you’ve never liked the taste of it – I encourage you to try one of these recipes. You just might surprise yourself.
1. Paleo Cauliflower Tater Tots by Empowered Sustenance
When I think of cauliflower, I think of wilted, stinky vegetable. Empowered Sustenance has made cauliflower almost unrecognizable with these yummy tater tots. I’m thinking my kids are going to even like these. PLUS, the avocado/lime sauce recipe is included and you KNOW how I love my avocado. Add some homemade sausage and this could be breakfast.
2. Parmesan-Roasted Cauliflower by bon appétit
As I mentioned above, this is the recipe that changed my tune. I didn’t use the parmesan cheese because I am dairy free right now – so if you are also dairy free – the parmesan isn’t what makes or breaks this recipe. I truly believe ROASTING vegetables is the BEST way to eat them. It brings out a natural sweetness and richness that no other preparation does. Give it a go!
3. Butter-Drizzled Cauliflower by Kara Carrero
If you want to skip the whole cutting the cauliflower before baking, this is your recipe. You can use butter or ghee and you will need a cast iron skillet for this mouth watering recipe.
4. Paleo Mac-n-Cheese by My Natural Family
This is the perfect recipe for the kiddos. Bear in mind – this is no Kraft so if you just gave the kids the Kraft version yesterday, it may not be the best time to introduce this one. That being said, this is going to have WAY more flavor and by that I mean REAL flavor!
5. How to Make No-Fail Cauli-tatoes by Traditional Cooking School
Let’s just say I haven’t been a huge believer in cauli-tatoes, but now that I’ve had my revelation on cauliflower, I’m going to give these a go for Thanksgiving. No, it’s not exactly the same as potatoes, but you know what? It’s better -because it won’t mess with your gut AND you won’t have that bloated feeling you get when you eat traditional taters. 6. Cauliflower Alfredo Sauce by Leelalicious
Have you heard of Cauliflower Alfredo sauce? I hadn’t either. However, I am always looking for ways to add flavor and texture to a simple meal to make it a little more special. If you are in the same boat – this is for you! Add to a casserole or zucchini noodles or even grilled chicken!
7. Buffalo Roasted Cauliflower Steaks by Clean Food Crush
These are so pretty, aren’t they? Roasted cauliflower amped up by a Buffalo style sauce. For SCD, use the following ingredients to make your sauce:
1/4 cup original Tabasco sauce
6 tbsp melted butter
1 clove minced garlic
1 pinch cayenne
1 pinch black pepper
