One of the first vegetables you eat on the SCD diet is carrots. It’s part of the Intro Diet which I talked about HERE.
Once you are past the Intro diet, carrots continue to be a staple in the diet. If you are having trouble getting creative with carrots, don’t worry! I’ve been scouring the internet for you. Here are some great recipes I found that should help add variety to your helping of carrots this week.
1. Quick and Easy Side Carrots by Make It Do
These are a cinch to make with only carrots, butter and the herb of your choice. Hello easy weeknight side dish!
2. Carrot Fries by Healy Eats Real
When I first heard of vegetable fries I though, yeah right – they aren’t as good as the ‘real’ fries. Friends, I was so wrong. They have so much more depth and flavor. If you are used to eating baby carrots raw – this recipe will be like a whole new world. Roasting vegetables brings out the best taste so it doesn’t need more than salt, pepper, garlic powder and thyme. For SCD: remember to check your labels on the garlic powder for anti-caking agents. Enjoy!
3. Garlic Butter Roasted Carrots by Diethood
As you can see, I can’t help myself. I HAD to give you another roasted recipe. Similar to the first, but the cutting is easier and I like using garlic cloves as opposed to garlic powder. Choose either one, you can’t lose!
4. Nut Free Paleo Carrot Cake by A Saucy Kitchen
Most traditional carrot cakes have a wealth of brown sugar and oils. The use of coconut flour, oil and flakes takes this one to a whole new level. For SCD: use honey instead of maple syrup. Are you drooling as much as I am right now? Goodness this looks fancy enough for guests, but simple enough for you to eat it later tonight! 🙂
5. Creamy Carrot and Ginger Soup by Wholesomelicious
Truth is, I’m not much of a creamy soup kinda gal, but I know some of you LIVE on creamy soups, especially as we head into fall. The ‘cream’ in this soup is coconut cream or coconut milk. It also calls for Vegetable stock. For SCD: use homemade vegetable stock.
6. Carrot Ribbons in Rosemary Butter Sauce by Do You Even Paleo
My oldest daughter asked “What kind of noodles are THOSE?” when she saw this picture. Aren’t they pretty? So easy to make ribbons with a vegetable peeler. This does take a little longer than chopping, but it’s worth it. Beyond the peeling, this recipe is very simple with butter, parsley and rosemary. Add some grilled chicken and you have yourself a delicious feast!
7. Raw Carrot Cake by Unconventional Baker
Last, but certainly not least is this beautiful cupcake. You don’t even have to turn the oven on! For SCD: use honey instead of maple syrup. Yummy!
